I don't know how many of you are Brickset users, but over there they have a running series of articles which review things that still haven't been made into sets from the Star Wars movies. I thought it would be fun to do something like that here, especially for those of us who want ideas or don't want to make the "same old" temples and stuff.

I'll start!

I haven't seen a Greek-style theater, with a semicircular row of seats around a stage.

I think you mean Odeon. You're right, I think in all the versions I've seen produced I've only seen two or three of these.

Honestly what I haven't seen is an Archimedes Screw done as a classical well for a city, preferably with an aqueduct.

Indeed! I've never seen that one done before either :-)

Another build that would be interesting to see would be the Ancyra Device - though that one would probably be almost impossible to do accurately. The trade-off would be between accuracy in look and color over function or vice versa.

Scratch that last comment, i just saw James' link to a working replica of that device :-D

And i got it wrong, it was of course the Antikythera device - not the Ancyra :-/

This is kind of specific, but i haven't seen any builds that really show off the Roman army's skill at engineering; e.g., boat bridges or roads.
